Years ago I transferred some midi files from my Ensoniq SD1 into Cakewalk (Sonar's predecessor) and I think theres a setting somewhere which tells it to split multiple midi channels to individual tracks upon record.

Equally I think the "set up 16 tracks to record on individual midi channels" technique should also work fine.
