They're all pretty good, including the free ones. Audacity's latest version is extremely versatile, user friendly, and best of all, it's free. http://audacity.sourceforge.net/

+1 on Reaper. I've been using it for about 4 yrs now and feel like it's the best bang for the buck out there. Warning - everything you'll probably ever need is in there BUT you're going to have a bit of a learning curve in front of you if you want to reap (no pun intended) the full benefits of this software.
