I've downloaded Jorgen Sorenson's amazing midi2style program which was programmed using Java. Apparantly, I should be able to use it on a Mac, because Java is compatible with everything. Does anyone know how to do this? I downloaded the program as an .exe file -- and a mac can't open these kinds of files.

If you have an Intel Mac, just boot up in Windows to run the .exe.... BootCamp, Parallels, all these should be fine.
