When I go to transpose a song, I write out the scale of the key it is in, and then underneath it the scale of the key I want to play it in:
in your case, the original is in the key of 'E'
E F# G# A B C# D# E and if you want it in 'C'
C D E F G A B C ... a G# in the original key would be an E in the key of C
