When I performed in the Florida Keys, it was mainly outside. However, I took precautions to protect my gear from moisture, covered the top of the amp, console and all of the keyboard other than the keys with Saran Wrap. Worked for me, and worked very well. Most of those jobs were during the evening, and the humidity down there can get pretty high right after sundown. The neat thing was that audiences never noticed the Saran Wrap and the gear stayed perfectly dry.
Many of the venues supplied a tent, one that was completely waterproof, and made of rubberized canvas. The tents were about 12 X 12 feet and 8 feet high. The pitcher on my console atop my keyboard is for tips- the beer is sitting on a table to my left and a customer just brought it over to me and sat it down and thanked me for playing a song he requested. One customer came up and asked if I was worried that my Bob The Flame would set the tent on fire. I laughed and placed my hand in the artificial flame. It was a neat device and Don Mason now owns it.

Good luck,
Gary
