I'm married to a 100% Cajun. She taught me how to eat Crawfish 33 years ago. Before that I used 'em for fish bait back on the Reservation. One of the Mexican restaurants here, Nicky's (where I play music sometimes) has Crawfish Enchiladas. Way better than they sound! DonM
