We are a non-profit choir (low to no budget). We want to start recording our performances digitally. What hardware and software do we need? Is finding used equipment feasible? We have 8 mics and an old sound board. How can they be used? We don't know much about sound mixing and recording, so please keep explainations simple.

I record a 300 piece chorus every year with 2 AKG C1000s mics. I run them in stereo through a Mackie 1202VLZ mixer direct to mini disk, then I transfer to CD at home in my studio.
8 mics are not nessesary unless you are featuring solos.
