What is a good way to record Audio from the 1500's out's to turn in to mp3? Is there a Recorder that does MP3 right away? USB?

I can highly recommend the Zoom H2, or H4 either one. The H2 is $199. and a great bargain at that price. You can record in your choice of MP3 formats or in WAV format.
I've had good success recording from either the line outputs or the headphone jack.

Nope. Just follow Don's advice, above. Clean signal in, clean signal out. On-board mics ok for rehearsal.

If you're a PC person you can use Audacity to record and process the sound.

With a PC solution the question is whether your soundcard is up to it, and the major issue with PC sound is noise; the chipsets on motherboards and budget soundcards tend to be a bit hissy, although performance is improving all the time so I might be talking rubbish here.

An external soundcard connected via USB should have lower noise, so thats a possibiity as well.
