I don't have a full listing of sounds available on the KN2600 keyboard but I believe the 3 voices you mentioned are probably on it and if so should sound fairly similar to the 7000 particularly when fed through a decent amplifier and speaker system. The 2600 amplifier and speakers are not as good as the 7000 but for both keyboards, organ sounds in particular are greatly improved by a decent external system. As far as I can recall the the 2600 does not have the organ tabs facility of the 7000. It also doesn't have aftertouch on the keyboard (not normally relevant to organ sounds). It only has 64 note polyphony against 128 for the 7000. The limitation of 64 notes quickly becomes apparent when layering organ sounds. I don't know how the range of preset organs compares but when you combine and edit organ sounds on the 7000, the scope is truly amazing (I have done quite a bit of experimenting with this).
Overall for organ sounds the 7000 is a much better keyboard but the 2600 may well be perfectly adequate for your church requirements and is considerably cheaper and lighter.
