I do and I did not play / record any keyboard or guitar in mono since the early eighties.
Even for acoustic guitar I use two mics.

The other big advantage with recordings, is that it is much easier to "place" the instrument in the overall mix, wherever you want it.
Don't know another word to describe this, but I guess you know what I mean.
