Armando .. I would like to know more about your zeppole (a simple candy???) ... ours is a pastry puff, baked or fried (fried RULES) filled with various types of cream fillings ... Personally, only a ricotta filling (like in a cannoli) works for me, but here in little Rhody they fill them with a 'custard' type cream also ...
