I have found Mark Levine's Jazz Theory Book to be comprehensive. It's massive and covers virtually every aspect of jazz.

I've had it for 9 months and am about 100 pages in. It's not the most simple book in the world but it sure beats a couple of other really lousy jazz theory books I bought before it.
