Jobim used in 90% of his composing the important tensions in his melody, like the notes 7th(major and minor),9th,11,....
If you study the melody of "the girl from ipanema" it start with the 9th en M7 in the melody. In the middle part he enter with the M7 in the melody on the GbM7 chord.
Also in "desafinado" the second chord is the G7 b5 chord and he used that b5 in the melody!! If you analise the most of his songs you will see that he use this frequently , I will not say he composed that way, I think it's naturaly he "had it"!! It's always the art to create this
songs with complex harmony and melodie's,
you must have a good harmonising thinking and the real feel for making this music.
That's why Jobim called "the Brazilian Gerschwin" ............

The sequence C-Am-Dm-Gm-C7-F-Fm-C-A7-Dm-G7-C.
With Jobim's taste, would be.
C9-Am7-Dm7-Gm7-C7b9-F9-Bb7-Em7-Edim7-Dm7-G7b9-C9
