You do need a special pickup to provide MIDI conversion to drive a MIDI equipped synth. If the modular synth is pre-MIDI then it would need a MIDI-2-CV converter also.
Some synths do allow processing of an external audio signal (such as guitar) but this is not the same as triggering, as it is still basically the sound of the incoming audio rather than the synth waveforms.

yes! I have a korg electribe ea-1 that allows an external audio input / signal which is then modulated (analog).
