Which one is better?
Well, which one do you prefer?
I prefer real time recording. First record - then process (quantize etc..)

Well,
Wat kind of help do you need?
If you can't play the keyboard you can still use real time. There are a few tricks.
1)When recording - slow down the tempo to about half speed (Of coarse don't forget to put it back to normal when you're playing it back ).
2. Loop the section around and play one-two notes per loop. That way you don't have to play it all at the same time.
3. Combine step time and real time recording. Use features like quantize and editing capabilities to correct errors and mistakes.

Step time is useful as well. I often use it to sequence drum parts, all kinds of repetative basslines etc...
When I was doing techno stuff in the mid 90's step time is all I really used.
Nowadays, I use a bit of both and other ways to record as well.

Are you absolutely sure you can't loop?

If that's the case, then you'll have to slow down the tempo and then record.
