Hello to you,
Since your ultimate purpose is to write scores and publish these scores or edit the scores then replay or publish them, My question would be how much are you willing to spend.
There are very specialized midi sequencer/score editing and publishing software and there are various softwares that support scores but not very specialized in it. Furthermore, it also depends on what you really want to do: do you actually want to record audio and burn cds for your audio?
In terms of hardware, you will need a midi adapter. That is all.
I know I am not giving you enough information to start the project, but I am giving you enough information to ask more questions and provide more information about what you need; so we can assist you for the second step.

i don't want a very expensive setup, i just want to be able to easily score my piano compositions.
also i want to be able to record my tracks on my computer and edit them using various editing software such as soundforge...
this midi adaptor? is that the midiman? when you connect it to your usb port on your computer, your computer will see it as some sort of midi device? and you can start recording using the software right?
what software out there can do this? thanks again!!

I like Cakewalk. Most sequencing programs will score your music but not as well as a dedicated program.

CUBASE score , MOTU Free Style , OPCODE Studio Vision score . These programs will do what you want and they don't break the bank . These programs do not record audio , they are for scoring midi info . Check them out , and there are more to choose from , but , the more features it has than the more it will cost .

If you are using a PC and don't want to break the bank
Powertracks is well worth looking at and provides MIDI sequencing and digital audio support.
